Cela d\u00e9signe par exemple le tofu, la sauce salsa, le houmous et les produits \u00e0 base d&rsquo;avocat.<\/p>\n<p>Le houmous ainsi que les salsas \u00e0 base de tomates et de fruits sont des produits id\u00e9aux pour utiliser la haute pression. Sans le HPP, ces produits ont une dur\u00e9e de conservation tr\u00e8s courte et pr\u00e9sentent un risque \u00e9lev\u00e9 de cr\u00e9er des probl\u00e8mes de s\u00e9curit\u00e9 alimentaire. Un autre exemple est celui des produits \u00e0 base d&rsquo;avocat comme le guacamole. Le guacamole, les demi-avocats, les tranches et la pulpe d&rsquo;avocat forment l&rsquo;une des plus grandes cat\u00e9gories de produits trait\u00e9s au HPP.<\/p>\n<p>Sans traitement au HPP, ces produits s&rsquo;ab\u00eement rapidement. Lorsqu&rsquo;ils sont trait\u00e9s \u00e0 haute pression et sans conservateurs, la dur\u00e9e de conservation est consid\u00e9rablement prolong\u00e9e, la s\u00e9curit\u00e9 alimentaire est assur\u00e9e et les nutriments et le go\u00fbt frais restent intacts.<\/p>\n<p>En ce qui concerne les produits \u00e0 base d&rsquo;avocat, le HPP n&rsquo;inactive pas l&rsquo;enzyme responsable de l&rsquo;oxydation, et donc du brunissement.
